Do you have one of those signature dishes that you are always asked to make? My friends know I am not a baker (although my family hasn’t figured that out yet) and I am usually asked to bring an appetizer. When I ask if they have any requests, it is usually for “that corn and bean one”. So, I thought I would share it in case you have an end-of-summer party to attend.

1 can of black beans, drained and rinsed
1 can of corn, drained
1 small red onion chopped small
2 medium tomatoes, seeded and chopped small
4 green onions, chopped small
2 avocados, also chopped into small pieces

Mixed together and toss with 1 package of Good Season’s Italian Dressing (dry mix), plus 1/4 cup of vegetable oil and 1/8 cup of vinegar.

Serve with Scoops or any nacho chip!
