Our family normally eats dinner between 6:30 and 7:00pm because of our after school activities. With softball season in full swing (no pun intended), we need to leave the house by 4:30 or 5:00 and do not return until 8:00 or 8:30. That is too late to eat, even for us. Eating dinner at 4:00 causes binging snack time at 8:30. Everyone comes in starving because we ate so early and we did not eat a lot. Our 4:00 meal is usually sandwiches or much smaller portions of a regular meal.

My solution has been to make desserts that include fresh fruit. The first night was my son’s birthday and we had strawberry shortcake. I just used those premade shells and fresh strawberries with Cool Whip. It was a hit and we had some the next night, too. The third night, my daughter asked me if we could have it again, but we were out of strawberries. That’s when I remembered seeing this recipe for Banana Quesadillas on the Food Network. It was so simple and a hit with the whole family!

Banana Quesadilla

For each quesadilla you need:
(2) 8 or 10 inch flour tortillas
1 banana sliced thin
a sprinkling of chocolate chips
cinnamon and sugar

Melt a pat of butter in skillet
Place one of the tortillas in the skillet
Spread out the sliced banana evenly over the tortilla
Sprinkle with chocolate chips
Place the other tortilla on top
Add another plat of butter on top
After a minute, flip the quesadilla (you will need two spatulas)
Add cinnamon and sugar to taste
After another minute, flip again and sprinkle with cinnamon and sugar

Add a little Cool Whip or Vanilla Ice Cream on top
One quesadilla feeds four people
